In honor of St. Patrick's Day, I decided to make cake pops that had a distinctive Irish feel without being a literal interpretation of what I grew up knowing of St. Patrick's Day (the leprechaun and pot o'gold at the end of the rainbow). This is how the clover idea came to be. Since clovers are so abundant in Ireland, and were used by St. Patrick to teach about the Holy Trinity, I thought this design would be the most fitting. The chocolate mint cake inside just happens to be one of my favorite flavor combinations! So there you have it......Clover Cake Pops! Happy St. Patrick's Day to each and every one!
